GARLIC & PARMESAN CHICKEN "RISOTTO"



4 SERVINGS     PREP TIME: 15 MINTUES     COOK TIME: 15 MINUTES


INGREDIENTS:

1 lb. boneless, skinless chicken breasts, cut into bite-size pieces
2 Tbsp. margarine or butter, divided
2 cups sliced mushrooms
1 package Knorr Rice Sides - Garlic Parmesan
1/2 cup milk
1/4 cup frozen green peas


DIRECTIONS:

     Dinner is almost ready!

1. SEASON chicken, is desired, with salt and pepper. Melt 1 tablespoon margarine in large nonstick skillet over medium-high heat and cook chicken, stirring occasionally, until chicken is thoroughly cooked, about 5 minutes. Remove and set aside.

2. MELT remaining 1 tablespoon margarine in same skillet over medium-high heat and cook mushrooms, stirring occasionally, until golden, about 3 minutes.

3. ADD 1-1/2 cups water, Knorr Rice Sides - Garlic Parmesan, milk and peas to same skillet and bring to a boil. Reduce heat to medium-low and simmer covered, stirring occasionally, 7 minutes, or until rice is tender. Stir in chicken until heated through.
